Great-Family Visits

Top O' the Mornin' to Ya

Our not so traditional St. Patrick's Day dinner...Corned Beef, mashed potatoes, and sugar snap peas. Actually, I ate rice and Brian had mashed potatoes.
Asia ate green food too! Peas, turkey and rice. Yum!

Pitter Pat 5k


Yesterday, we competed in a 5k in Springfield, MO. It was rainy and cold!!! Asia was snug in her stroller with rain flap...I think she was one of the only people to stay dry. Brian took 3rd place for his age division and 10th place over all. Asia and I...(I push Asia) didn't come in last which was my goal. I didn't get a medal...but I won a door prize (a gift certificate to The Argentina Steak House). That has got to count for something!

Pie Dreams

Do you ever have weird dreams? I sure do... The other night...I had a dream about pie. Not just any pie...a pie that my mom used to make in the Philippines. I woke up in the middle of the night after this dream...hungry for this pie. So, in the morning...I called my mom and asked her for the recipe. Unfortunately...she didn't have the recipe any more...so, I went to my folks house and thanks to the www I found a recipe for it. So...I hurried home and made it.
Oh, by the way...it's called "The Impossible Pie"...it's kind of a no crust coconut custard pie.

The Easter Bunny



Ok, so we broke down and took Asia to see the Easter Bunny.
Asia was super excited to see him, she kept trying to walk over to him while other kids were getting their pictures taken. Then, she got to within 1.5 feet, and her whole body tensed up. She was not excited anymore. She wouldn't take another step, and refused to smile for the camera (which almost never occurs).
Oh, well, at least the picture was free.

Sunshine & Warm Weather

Zuppa Toscana Soup


I got this wonderful recipe from my dearest mommy...just wanted to share. It's really yummy.
1 lb. spicy Italian sausage-crumbled
1/2 lb. smoked bacon-chopped
1 qt. water
2 14.5 oz. cans (about 3 2/3 cups) chicken broth
2 lg. russet potatoes-scrubbed clean, cubed
2 garlic cloves-peeled, crushed
1 med. onion-peeled, chopped
2 cups chopped kale OR swiss chard
1 cup heavy whipping cream
salt & pepper-to taste
-In a skillet over med-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
-In a skillet over med-high heat, brown bacon, drain, set aside.
-Place water, broth, potatoes, garlic and onion in a pot; simmer over medium heat until potatoes are tender.
-Add sausage and bacon to pot; simmer for 10 minutes.
Add kale and cream to pot; season with salt and pepper; heat through.
